Pinterest Ideas and a Recipe

It's time for some Pinterest!

Yesterday I tried this recipe:


I decided to do the strawberry applesauce.

It takes 5 lbs of apples, which is a lot! The apples weren't cheap, if you could find a good sale it would probably be better. The strawberries were on sale though! Here is the process in pictures:



This recipe has no added sugar, and it tastes good!! It would be easier if you made it with someone, so you don't have to try to juggle all the steps. Gus ate about 1 cup of it for dinner. Josh also ate it and liked it. So- another Pinterest success!!! I can't wait to try the other kinds of applesauce!

For dinner last night, I decided to make homemade scomboli! I got the idea from another blog- it can be so helpful to get ideas for dinner from other bloggers! I read several recipes, and then basically made up my own recipe. So here it is:

Homemade Scomboli Rolls
Pizza Dough (I used my Betty Crocker recipe, but replaced some of the flour with whole wheat flour to make it healthier), enough for 1 crust
Ham
Pepperoni
Mozzarella Cheese
Parmesan Cheese
Olive oil
Basil
Garlic Powder
1 egg white
Pizza Sauce

Preheat the oven to 375. Divide the dough into small portions. Press out the dough. Put a little bit of olive oil and spread it on the dough.
Sprinkle a small amount of basil and garlic powder on each dough. Then place several slices of thin ham, pepperoni, then mozzarella and Parmesan cheese on one side. (and those pepperonis on the top of the cutting board- ones I am eating as I cook ;))
Roll up dough, starting with the side with all the toppings. Squeeze the ends together as you roll. Place on cooking sheet that has been greased.
Mix the egg white well. Brush over the rolls to give them a pretty brown color. Bake for 20-30 minutes until starting to brown and they are cooked on the bottom.
Serve with pizza sauce, which can be poured over the top or you can dip the rolls in. They were very yummy. You could also put sausage or hamburger in them.

Tuesday happenings

This morning, I began tackling the office. I tend to just throw things onto the desk in there... all the bills, mail, etc. After, um, let's say...... a few month (hiding my face) the desk is quite piled, as you can imagine. This morning began with sorting, then filing. But, my work was being hampered. Gus found my new printer. Gus loves buttons...... very much. So, he likes to turn on the printer. I don't want him to break it, so I tried to get him to stop. This eventually turned into a war, and ended with Gus going to bed for a little while and me sitting and having a moment of quiet. I continue to pray that I discipline Gus in a way that is pleasing to God. It really is hard. But I know I am just getting started.

It is SOOOOOOO dusty here today. The wind is blowing like crazy, and I can barely see across the street. I took this picture down the street, you can see all the dust:

For lunch, Gus and I went to lunch with some ladies at McDonalds, and then visited Daddy at work. Gus didn't sleep all morning, so he is now down for his nap, which I am hoping is a long one.

Misc. Monday

And yet again, I am committing to posting more!! Gus is just taking more and more of my time, so I am just adjusting and learning each day how to get things done.

Josh worked half a day on Saturday and then we just relaxed at home. Josh wasn't feeling too good, so we didn't do too much.

Saturday night I was wishing for some coffee cake, so Josh got up Sunday morning and made me coffee cake muffins. Wasn't that nice?!? Then we went to church and then came home for lunch. It was a BEAUTIFUL day!!!! We have been having quite a few days lately when it has been in the 60's but it is almost always windy. Yesterday, there was no wind. Gus was tired from church (it is a lot of work to entertain everyone!) so he took a nap. Josh and I sat on the back porch and relaxed. I put on some shorts (don't worry we have a high fence so I didn't scare anyone with my albino legs), and I sat in the sun. Folks, this morning there is a tan line on my skin!!! (very slight, but it is there!) That is an exciting thing for me :) When Gus woke up from his nap, we let him play outside. For some reason, he only plays on the porch, he won't walk out onto the grass.

And if you are playing outside- you have to chew on a stick!

Gus had a rough weekend. He fell on Saturday and hit right above his eye. You can see the little scratch here.

And then on Sunday he was helping with plates in the dishwasher and dropped a plate on his toe. Poor thing- his toe nail turned black and his whole big toe was swollen. He cried a long time which isn't fun for mommy and daddy.

That night we did something that we really enjoy- watch the Oscars!!! We turned on E! to see the red carpet. We order pizza, and I printed some ballots for us to pick our winners. It was a nice night. We didn't have one movie we were really wanting to win. We have seen Midnight in Paris and really liked it.

This week we are just back to our normal schedule. I spend most of the day chasing Gus. He loves to push buttons, and I think this picture is really cute:

Cute Little Guy

I have been trying to take more pictures of Gus because I have slacked off a little bit over the last week. It seems like he is doing something new every day! I am also trying to get some more videos of him talking. He is making so many sounds now. When he sees or hears dogs now, he says "duh." When I talk to him, he will talk back to me now. It is all so fun!!!

Yesterday he played a lot with his Pooh. I put the Pooh in his cart so he could push him.

One of my favorite things Gus started doing today is that he swings his right arm when he walks. So cute!!!

Gus got new shoes from both of his grandmothers this weekend. He looks even more grown up when he wears them!

About our Trip

We left to go visit my parents and Josh's parents on Friday night when Josh got off work. We arrived at my parent's house at 1:30 in the morning. Oh, and it was foggy for an hour near the beginning of our drive and then rained for about 4 hours. (not much fun driving in the rain in the dark!!)

On Saturday, my mom (who is a dental hygienist) cleaned our teeth for us. There are a lot of dentists in my family (great-grandfather, both grandfathers, and my dad). Gus had his first trip to the dental office with us, so we had to take a picture. (Gus just was visiting, he doesn't have any teeth yet to clean!)

We did a little shopping and saw a couple of friends. Then on Saturday night Gus stayed with MiMi and Big Daddy while Josh and I went out to dinner. We had a nice quiet dinner together, it was really nice.

On Sunday, my sister and her husband came to my parent's. My sister didn't know we would be there, we wanted to surprise her for her birthday. My aunt was also there when she arrived! We just talked to her for a while. We had planned more surprises that she didn't know about. At around 4 pm, several of her friends and our cousin and his wife arrived. We had a cake for her and got On The Border to eat. I think she had fun. I enjoyed it too because I am close to these people as well.

Monday we drove to visit Josh's parents and his sister. We had a nice visit and spent the night with them. Gus enjoyed having some ice cream
We headed back to my parents after lunch on Tuesday. That night, Gus was just exhausted!Here are a few other pictures while we were at my parent's:

Wednesday we headed home, and it was a looooooonnnngg day. 30 minutes after we left my parent's house, we got stuck in traffic for an hour- not fun! And then we fought the wind all the way home. But we are glad to be home.

Traveling is always an adventure when you have two dogs and a baby. The dogs like to sit in our laps a lot:

Gus was really good, he likes his car seat (except the last 30 minutes, but I was pretty tired by that time too!)

One thing that is always shocking when we travel south is the humidity. The day we left, my hands had bled twice from being so dry. Then we got to the humidity. My hair would not curl, no matter how much hairspray I used. I was glad to get back to the dry air.

Today I have been trying to get things all organized here at home. Gus and I went to get groceries earlier. I've been doing laundry and working on a project for church, which I'll talk more about on another day. I am tired!! We had a nice trip. It is always good to get away for a little while.
