Gus and I have stayed warm inside the house with our faithful provider braving the cold.
I am excited to share one of my favorite dip recipes with you today! We have a party to go to this evening, and I decided to take this dip. My mom used to always buy jalapeno pimento cheese dip from Whole Foods. Because she is an amazing cook, she decided to attempt to make it on her own, and this is what she came up with. It is great for parties or football game watching.
Jalapeno Cheddar Dip
1 cup grated Cheddar cheese (it will look better if you grate it yourself
1 cup grated Monterrey Jack cheese
2 jalapenos, seeded and chopped
2 large pieces of roasted red pepper, roughly chopped (I find these in a jar near the olives)
1 tsp. dill
1/2 cup mayo (you just need enough to hold the ingredients together)
3 green onions, chopped
minced garlic
optional- red onion chopped
Mix all ingredients and chill in the fridge. Take out a little while before serving
This looks really pretty at Christmas since it has red and green. You can served it with chips or crackers.
